Why We Chose This Coffee

Years ago, before honey processed coffees became one of specialty coffee's most celebrated styles, we discovered Cerro Las Ranas and immediately understood what made it different. Its incredible sweetness, silky body, and clean finish left a lasting impression, and it has remained one of our favorite origins ever since.

Today, we're excited to share that same experience with you.

ORIGIN STORY

Tucked into the volcanic highlands of Apaneca in the Ahuachapán region of western El Salvador, Cerro Las Ranas, or "Hill of Frogs," takes its name from a nearby lagoon that comes alive with thousands of frogs each year.

The combination of rich volcanic soil, cool mountain air, and elevations ranging from 1,450 to 1,780 meters above sea level creates ideal conditions for producing coffees with exceptional sweetness, clarity, and complexity.

MEET THE PRODUCERS

For generations, Jose Antonio Salaverria and his family have earned a reputation for producing some of El Salvador's finest specialty coffees. Their family operation, JASAL, is built on meticulous farm management, careful harvesting, and an uncompromising commitment to quality.

Every coffee cherry is picked at peak ripeness before being carefully processed to preserve its natural sweetness and distinctive character.

What makes honey process coffee special?

Unlike washed coffees, honey processed coffee leaves a portion of the coffee fruit, called mucilage, surrounding the bean during drying.

As the beans slowly dry on sunlit clay patios, they are carefully turned throughout the day to ensure even drying and consistent quality. This allows natural sugars from the fruit to enhance the coffee's sweetness while preserving the clean, vibrant characteristics that make honey processed coffees so sought after.

The result is a cup that beautifully bridges the gap between washed and natural coffees, offering both clarity and richness.
